After the so-called "sfecciatura", the young wines are moved from the wine-making cellar to the ageing cellar. In the dim light of the ancient cellar, where the temperature and natural humidity are held constant, the wines are put in wooden casks for refining. The slow repose in oak, a porous wood, allows for a natural and continued oxygenation of the wine, as well as the softening of the tannins.
The "Grigiano Riserva" will age for 18 to 24 months in new 500-liter barrels.
The "Villa Malacari" will age for 12 months in barrels and casks of various sizes.
At the end of this long period or rest, the contents of every barrel and cask will be tasted and analysed before being bottled.
